Meal Planning - May 18 - 24, 2021

It's been two days of too much paperwork. Yesterday was transcripts (among other things) and today was bills. I'm kind of done with paperwork at the moment. Planning the menu felt a little bit like a reprieve.

Yellow chicken curry
     This is W.'s recipe and uses chicken and potatoes
Rice
Naan

Wednesday, May 19

Lemon spaghetti
     An easy dinner for a day when we aren't sure what time exactly we'll be eating due to J's work schedule. I can pretty much put the water on to boil when he says he's on his way home and have dinner ready in the time it takes to boil the water.
Garlic bread

Thursday, May 20

Split pea soup
     From the ham we had last week. But, why, oh why, does Aldi not carry dried green split peas??

     From scratch (I'm hoping I can convince G. to make them)

Friday, May 21

BBQ beef sandwiches
     Done in the crock pot, which means it's ready when we are. It will be a sort of crazy afternoon, and I'm not sure what time we will be back. It will be good to have dinner waiting for us.

Saturday, May 22

Grilled chicken legs
      I bought a whole bunch of chicken legs a couple of months ago when they were super marked down to something like $0.40/pound. We'll marinate them and grill them, so even if they aren't fantastic, they'll still be okay.

Sunday, May 23

Cha Ca
     This is a Vietnamese dish that TM really wanted to have before he left (13 days!!). It uses catfish and dill, and the whole thing is served with fresh herbs over...
