Meal Planning - April 27 - May 3, 2021

I've had a change of schedule, so I'm going to the grocery store on Tuesday afternoons now. That also means that my meal planning post will be moving to Tuesday. Easy and cheap was what I was looking for this week. I was so tired yesterday when I was making the menu that I couldn't fathom doing anything too labor intensive.

Tuesday, April 27

Hot sausage and cabbage stir-fry
     This is pretty quick and everyone likes it. The stir-fry is served in warmed tortillas along with hoisin sauce
Cucumber salad

Wednesday, April 28

Skillet chili mac
     Would you believe I've never made chili mac before? This is a new recipe for us. I found a few more pounds of frozen ground beef in the refrigerator that was hiding, so I'm using some for this.

Lentil dal
     We love dal, plus it's pretty easy.
Naan
     I had some in the freezer from when I bought it on sale a while ago.

Friday, April 30

Reuben sandwiches
     I had one more corned beef in the freezer and a jar of sauerkraut in the pantry. I do this in the crock pot.

Saturday, May 1

Aldi pizza
     TM requested we do cheap pizza. Since he will probably be the one cooking, it seemed nice to say yes.

Bucatini with bacon, spinach, and creamy Parmesan sauce
     We're trying another recipe to go with our bucatini that I stock-piled a bit when I found it.

Fully Loaded Buttermilk corn cakes
     I love these, and once everything is chopped, they're pretty easy.

I just tried this with this week's recipes, so I know it works.  I try to give you the names so that you can do this, such as with the corn cakes. It's Mollie Katzen's recipe, but if you search that name, you'll find it. If I get a recipe from a published source that I have not tweaked, I do not share them here because they belong to someone else. Recipes that are mine or that I have significantly changed, I'll share. Actually, I often have and checking my recipe page could help you find what you are looking for.]
