Meal Planning - April 12 - 18, 2021
The theme for this week while I was planning was 'what is cheap to offset the cost of our Greek feast on Sunday?' It's fun to have a splurge once in a while food-wise, but I still like to keep the budget for the week in the same range. It makes splurges possible.
Monday, April 12
Fish chowder
The more eagle eyed among you may notice that this is a meal from last week. I had to do some rearranging of dinners last week because getting ready for my next round of horse classes took far longer than I anticipated one day, so instead of cooking, we got cheap sub sandwiches from the grocery store and chips. This meal got pushed to this week.
Sourdough bread
Tuesday, April 13
Swedish meatballs
Really the only reason we're having this is because as I was looking through the pantry the other day, I discovered I have another jar of lignonberry sauce which made me want Swedish meatballs.
Red potatoes
Writing this list out every week can be helpful sometimes. I'm realizing that I forgot to buy red potatoes at the store today, so will need to send a helpful child who drives to pick some up tomorrow.
Cream sauce
Lignonberry sauce
Wednesday, April 14
Lentil soup
I had this in the freezer. With fewer people at home these days, I sometimes actually have enough leftover from dinner to freeze.
Salad
Thursday, April 15
Lemon spaghetti
Easy and cheap
Salad
Garlic bread
Friday, April 16
Sausage risotto
P. comes home on Saturday, so everyone wanted to squeeze in some more risotto (which P. decidedly does not like) before she gets here so as not to subject her to it.
Sliced sweet peppers
Sometimes I get tired of green salad
Saturday, April 17
I discovered a frozen pork roast in the freezer
Sunday, April 18
(Our Greek feast to celebrate what everyone has learned this year studying ancient Greece)
Grilled lemon chicken
I'm using a Greek salad dressing recipe for the marinade
Melitzanosalata
This is essentially a Greek baba ghanoush, which we all love
Pastitsio
Greek salad
Pita bread
Baklava
The pita bread and the baklava will be picked up at our favorite Middle Eastern restaurant from when we lived in Evanston. Happily they have another site a half hour from us. This seems like a good reason to make the drive.
