No theme this week, I just flipped through my recipes and picked some.

Vegetarian lentil soup with croutons
Cheap and easy. Plus, I made so much we are freezing the leftovers for another dinner. This doesn't happen very often around here.

These are called Vietnamese pancakes if you've ever had them in a Vietnamese restaurant. TM wanted these. He is anticipating his ship-out date of June 1 and is making sure I have made all of his favorite foods before he leaves.
