Meal Planning - March 15 - 21, 2021
For all of you, who like us, had a major blowing snowstorm today, enjoy a little promise of spring that I discovered under the grow lights today.
Now that we have reminded ourselves that the snow won't last, we can move on to the business at hand.

Reuben sandwiches
March always brings corned beef sales, so I stock up. Reuben sandwiches are pretty much all we ever use them for because we love them so much. (Except the time I corned my own brisket... that we ate straight because it was so good.)

Rustic fish chowder
If this week has a menu theme, it is "flip through the new food magazines that arrived and pick some meals from those." This chowder sounded good and it served 12 people with only one pound of fish. Who doesn't like that?

Beef and cabbage turnovers
Cabbage is on sale, too, this month. My family adores these. It uses the biscuits in a can which always make me feel vaguely guilty, but I've tried it with biscuits from scratch and that makes an already time consuming to prepare meal completely unworkable. I tend to only make this once or twice a year because I need enough time in between to remember how much work it is to construct them.

Espinacas con garbanzos
This is also from a magazine. It is a tapas-like dish with spinach and garbanzo beans. It looked interesting, so I thought I'd try it.

BBQ pork sandwiches
I still have some pork roasts in my freezer and can't do anything involved on Fridays. I just don't have the energy. This is what crock pots are perfect for.

Ponzo steak salad
We're having this because the weather should be warmer and I'm hoping we can grill. (I have frozen steak in the freezer.) Actually, we're really having this because A. texted our family group chat trying to figure out what this dish was because she wanted the recipe. Then, when we all remembered it, we decided we all wanted to eat it. It's a grilled steak salad that uses ponzo soy sauce (essentially a citrus-y soy sauce), green onions, and spaghetti.

Kimchi fried rice
You guessed it, also from a magazine. It means I need to hit up an Asian market before Sunday, though, because none of my regular places sell kimchi. Sigh. I miss my old grocery store... still.
Eggrolls... or jiaozi, whichever I happen to find when I go to the Asian market.
