Meal Planning - August 18 - 25, 2020

I actually made a menu before going to the store today. It felt like a minor accomplishment.

Tuesday, Aug. 18

BLT sandwiches
     The tomatoes in the garden are all getting ripe. And when you have a lot of good, ripe tomatoes, you have to make BLT sandwiches.
Sauteed spinach
   

Wednesday, Aug. 19

Basil chicken with feta
     I picked up a bunch of chicken breasts on sale for $0.99/pound last week, so we can go back to having some chicken dishes. This one is very good and is done in the crock pot. Along with the chicken and feta, it has chick peas (in my freezer) and basil (lots of it in the garden).

Thursday, Aug. 20

Zesty kale and sweet potato bowls
     This is a new recipe for us. I'll use millet instead of quinoa for the grain. I don't actually care for quinoa and found a bunch of millet on clearance a week ago for $0.20/pound. Sweet potatoes were on sale today and kale is in the garden. I'm hoping there is enough in these that I don't need any other dishes.

Friday, Aug. 21

Taco salad
     A stand-by that is good for warmer weather as it is served cold.

Saturday, Aug. 22

Spaghetti with pesto
     With lots of basil in the garden, pesto is also a must. I even bought a ridiculously priced bag of pine nuts at Costco the other day in preparation of much pesto making.

Weeknight steak and noodle salad
     Another new recipe for us, though we'll be having it on the weekend and using chicken instead of steak.

Split pea soup
     With the ham bone left from last week. Why are split peas so difficult to find, though?
