Thank you everyone for your very kind comments. They made my day. After a week of seeing my stats drop to levels I haven't seen in years, I really was wondering if anyone was reading. I'm so glad you are, and I'll keep writing. Now, on to the day's business.

Zucchini enchiladas
The zucchini in the garden are finally starting to produce vegetables. I had three zucchini, and this is one of my favorite ways to use them. I make a homemade enchilada sauce for them.

Pasta with roasted summer vegetables
This is a great mid-summer dish. It's nice I have a bunch of cherry tomatoes that we can use.

Grilled ancho-rubbed pork chops
I have a bunch of frozen pork chops from the last side of pork we bought. Why this is on the menu is kind of funny. As I was making the menu for this week, P. decided that we should randomly select a cookbook from my collection then randomly select a page, and then make that recipe. B. got in on the fun and figured out how to randomize it. This is one of the recipes they came upon. Since I have pork chops and it sounded good, it made it on the list. I'll also note that this is only recipe chosen by their selection method... and they chose a lot.

Marry Me Chicken
This is a Delish recipe that we tried a while back and liked... despite the corny name. It uses sun-dried tomatoes, which I bought in bulk from my friendly wholesaler, so I already had the most expensive ingredient. Well, and the chicken, too. Thighs bought on sale in the freezer.

I have pounds of lentils, and this soup is easy and good.
