Slow news day

Since I am currently binge reading Live Laugh Love: the secret history of white Christian women and the world they made by Kristin Kobes Du Mez, you don't get much tonight. (Ms. Du Mez also wrote Jesus and John Wayne.) I may write about the book after I've had time to process it, but I don't know if I will yet. I first have to deal with some personal anger over feeling a bit of a victim of a bait-and-switch first. To clarify, that would be anger at people I thought were better than they were and not at the book. If you've read it, I'd love your thoughts.

Here's what you do get. First, the ever awe-inspiring photo of canning jars out of the canner.

That would be six quarts of beef stock that I pressure canned today. We had beef and barley soup that I made with some beef bones over the weekend. This also meant that I made quite a bit of stock. Today was the day where I had enough time to babysit the canner. Pressure canning isn't difficult, but it is a bit time consuming waiting for the canner to come to the correct pressure and then making sure it stays at the correct pressure.

Then in other canning news, a week or so ago I made and canned some dilly beans. Our local farm market had some last of harvest green beans, so I scooped them up. It turned out to be a few more beans than I had thought as I ended up with 8 pints of dilly beans. That is also one and a half gallons which seems far more impressive.

My shelves where I store my home canned items are looking pleasingly full, which feels immensely satisfying. I think that might be the end of the canning for a while... at least until it's time to start making turkey stock after Thanksgiving.
