Mission Impossible

(Cue Mission Impossible music)

Your mission should you choose to accept it: Drive to Iowa, pick up a full beef plus a quarter from you brother, return home, and try to fit the meat into your freezer. This message will probably not self-destruct. If it does, I think you have an issue with your electronic device.

I did accept the mission and headed out at 8:00 this morning for Iowa. I met my brother and sister-in-law, transferred several hundred pounds of frozen meat (grass raised on their transitioning to organic farm) from their coolers to my coolers, visited for a bit in the warmer-than-usual weather, and headed home.

Three-quarters of that beef were for another of my brother's customers in the Chicago area and a half was for us. It filled up two large coolers, two small coolers, and three insulated tote bags.

But even with that half, I was not entirely sure that I was going to get it to fit into here.

The first thing I did was to completely empty the freezer so I could start from scratch. I then made a list of everything that was going in and tried to somewhat organize everything. It was close, but I managed it.

This is actually the first 'after' picture. Not too long after I took this, J. noticed two small coolers I had forgotten to unload. The actual 'after' picture is not quite as organized looking as I had several more packages of steaks and four or five more roasts to squeeze in. I did it, but I'm pretty sure it cannot hold anything else for the time being. Even having a list isn't going to do a whole lot of good at first as many things are buried so far back it will probably some time in the spring that they become available.

A side of beef is what we got last year and I managed to spread it out evenly so that last week I was using the very last bits. I only had one package of sirloin steaks left and that was because they were hiding behind something else and I didn't know they were there. I love it when things come out even. I also love having a freezer full of food that will last a full year.

You need some plastic bins in your freezer. The bins take up a little bit of space, but it helps to organize things and keeps everything from fall out. And I need some beef in my freezer. We just got half a pig, but I miss the days when we raised our own.
