Much of this is written for anyone who went to grade school in the 70's
J. and I spent a good portion of the afternoon cutting back some of the many weeds and volunteer trees and bushes that seem to appear overnight. It feels like just a dent in what needs to be done. There often seems to be no way to keep ahead of all the growing that happens at this time of year. It does look a little bit tidier... for now.
This post is going to be all over the place tonight. We'll start with recipes. Several people had mentioned that they missed the weekly menu plans. So I thought I would share two recipes we made recently that we particularly liked. The first is One Skillet Lemon Butter Dijon Chicken and Orzo with Feta Sauce. This was really, really good. Everyone enjoyed it and it wasn't difficult to make. We did serve the feta sauce separately because some people really do not care for feta (I don't understand it myself), but this way they would eat. We will definitely be making this again.
The other dish we had tonight. I've been searching and searching for a butter chicken recipe that we liked. I think I have found it! The Stovetop Butter Chicken recipe was the best we've tried so far. It was also very simple to make. Even if you aren't familiar with Indian food, I suggest trying this one. We served it over basmati rice and had naan alongside.
This brings me to the two questions I want to ask. The first is, does anyone have an Indian cookbook that they love. I have one that I like, but I would like more. I'd love to have titles to look up and put on interlibrary loan. I've pretty much gone through the Indian cookbooks at our library.
My second question has absolutely nothing to do with cooking or Indian food. J. and I were talking about showing the masses old Yogi Bear cartoons before we go to Yellowstone because they completely missed a Yogi Bear reference that was made in the car coming home from church. This was followed nearly immediately by both of us deciding what we really wanted to show them was the bear movie. Anyone who went to elementary school in the 1970's will know immediately which one I mean. I think it was made by Disney and was a movie about bears, with the best part being the bit that shows bears scratching themselves on trees. I can remember my class cheering when we saw that this was the movie that was going to be shown. Does anyone know what it was actually called and is it possible to see it?
This led into a discussion about what a big deal watching movies in class was. We tried, but really couldn't convey their rarity to our media-soaked offspring. They also were completely unimpressed with how dull and boring it was to have to sit through educational film strips in class. I kind of want to find an old filmstrip set just so I can make my children sit through it.
My apologies to anyone who went to school after the advent of VCR's because you probably don't know what I'm talking about anymore than my children did. I'll be old and curmudgeonly and say you just don't know how good you had it!
