Meal Planning - Feb. 8 - 14, 2021

It sometimes feels as though I make these lists more than once a week. I know I don't, but boy, it sure feels like it. This week turned out to be rather a nice little tour of world cuisines. I didn't set out to make it that way, but it's where we ended up.

Monday, Feb. 8

Pork and asparagus stir-fry
     I had accidentally thawed two pounds of ground pork last week, so needed a recipe to make use of it.
Fresh noodles
Eggrolls

Tuesday, Feb. 9

Spaghetti with Italian sausage
     I don't have anything on the calendar for tomorrow, so making sauce seemed like a cosy thing to do on a cold day.
Garlic bread

Wednesday, Feb. 10

Lemon chicken
     This is one of those rare dishes that everyone likes. It's thinly sliced chicken, dredged in panko bread crumbs, and then fried. I make a lemon sauce to go over it.

Thursday, Feb. 11

Dal
     From my Indian cookbook, using red lentils
Naan
Jaiper slaw
     This uses red cabbage and daikon radish. Of course, the store didn't have any daikon radishes, so I need to find one, probably at the same time we go searching for lotus root.

Friday, Feb. 12
(Tet/Chinese New Year)

Jiaozi
     We'll be making our own, though with store-bought wrappers
Lotus root stir-fry
     Y. introduced us to this in China by ordering it. We had no idea what she was ordering but we learned we liked it. I was kind of surprised that our new Asian market didn't have any, but we have another place we can try to find some.

Saturday, Feb. 13

Baked talapia
     We first had this lemony fish when we were studying Kenya. It is very good and pretty easy, so has become something we return to.
Kenyan pancakes
     This recipe comes from the picture book Mama Panya's Pancakes, which I highly recommend.
Rice
Cooked carrots
     I've learned the hard way that this meal desperately needs some color to the plate.

Sunday, Feb. 14

Braised pork with tomatillos
     This cooks for a long time and seemed like a good Sunday dinner. Plus, I had a large pork roast in the freezer.
Polenta
     Sometimes I cheat and make instant polenta. This is one of those times.
