Meal Planning - Feb. 15 - 21, 2021

We are still cold. (I know, most of you are, too.) I will be so happy to see a return of at least double-digit numbers. To be clear, that would be double-digit numbers with a positive sign in front of them in case the weather got any ideas about being tricky. Because it is so cold, even my riding lesson in the heated arena was cancelled today. On the plus side, this meant I could get to the grocery stores before winter storm number 389,209 hit this afternoon. You will see that this week's theme for meal was comfort food. Warm food. Food that would make you gain weight except that just breathing while being outside uses up huge amounts of calories, much less dragging around buckets of water, trying not to let the wheelbarrow full of muck fall on you because you accidentally fell off the packed snow path that was covered with drifted snow so you couldn't see where you are going, and mucking stalls. We are officially at the time in the winter season where I am absolutely convinced that we will never, ever be warm again.

Spicy pork bowls with greens
     This uses pork tenderloin which I have in the freezer. It will also use up the rest of the napa cabbage which was left over from the jiaozi.

Friday, Feb. 19

Smoked sausage, potatoes, and green beans
     This is a crock pot meal that is hardly fine cooking, but is tasty and everyone likes it. It is also hardly a recipe. Layer red potatoes, frozen green beans, and smoked sausage in a crock pot. Put a stick of butter on top. Turn on high and cook all day. Salt and pepper to taste before serving. I have to use a crock pot and a Dutch oven in the oven to make enough.

Saturday, Feb. 20

Sriracha BBQ chicken
     This is a family favorite, and even though it uses quite a bit of Sriracha, it is not terribly spicy.

     From a box... because my children think this is a special treat.

Sunday, Feb. 21

Pork chops and apples in mustard sauce
     This is a new recipe which we're trying because I had some pork chops in the freezer. This recipe is from Fannie Farmer and while it might look rather healthy, it also uses quite a bit of heavy cream in the mustard sauce.
